We are excited to start NALF Food Friday with this delicious Mexican Casserole dish from Lawrence Family Limousin. They also like to call it Chili Casserole. Paula says, “It’s no family secret, but everyone likes it. You can make it hot or mild, use corn or flour tortillas, and substitute soups for whatever you have on hand. Experiment for your family and their tastes.” Paula acquired this recipe from Bruce’s aunt and has been making it for years.
Ingredients:
1 lb. hamburger meat
1 (10 ¾ oz.) can of cream of mushroom soup
1 (10 ¾ oz.) can of cream of tomato soup
1 can Ro-Tel tomatoes mild (or whatever heat level you prefer)
1 (10 or 15 oz.) can chili (with or without beans)
1 cup grated cheese (cheddar, pepper jack, or any blend you like)
Tortillas (corn or flour)
